What headphones do you use with your phone and / or tablet and why? I currently use the Sennheiser CX880i set kindly donated by Peter C. I absolutely love them and the difference in quality between these and the standard iPhone set is stark.
I actually have 5 earphones for my iPhone. The currently most used is the Klipsch Image One which I just adore (and is the only one that has iPhone controls on it). Next most used are my Sennheiser HD23s. Then my UE Triple-Fi Pros. Then my Creative BT phones (I forget the model number). And least used are my Grado SR-60's.
The Samsung Note comes with ear canals which are actually very reasonable. However I also mainly use my Bose AE2i headphones. Lovely relaxing sound and very comfy.
I'm still using the Apple set. I've gone through several mid-range Sony and Sennheiser in-ear sets and the problem is that the standard Apple 'phones are the only ones that fit my ears! Comfort is more important than sound quality for me and I don't mind the quite warm sound from the standard set at all.

A set of Shure 535's I got at a good price.
Extravagant but I spend most of my time on the road, on planes, etc, during which I watch, listen, and read.

I use Etymotic HF2's. Absolutely unbelievable quality, well worth the money
Shure SE430's. I got them just before the price shot up. Amazing sound and they shut out what's around you, which can be a godsend.
Panasonic RP-HC55 noise cancelling headphones. They do the job.
Sennheiser - not sure which model - came with my HTC.
