What one feature would you take from another mobile platform and add to the one you are currently using? I would probably go for the advanced home screen customisation and widgets available in Android and stick them in iOS.
App Switching / Card concept from WebOS - I suspect it'd be brilliant on iPhone (Just use the home button...), and even more fluid with the iPhone 4 processor. (Pre is 600mhz...)
Proper tv/monitor (hdmi?) output for the complete system for my iphone4. Sometimes I just want a larger screen. Add a Bluetooth keyboard and I have a portable laptop using tv's in hotels etc.
Or add air video and I can use my complete media collection anywhere.

OS stability and flexibility of Symbian on Android. Bluetooth profiles and stability is not up to the standard of Nokia or SE.
